Outlaw Star > Cowboy Beebop, IMO. Simple plot with some nice action sequences, it comes off as cheesey but humourus, until the latter, which is bad cheesey.

Depends what level of maturity/persuasion you're looking for, most of the fan subs I've been watching lately probably wouldn't suit.

record of lodoss war is good too, a bit like lord of the rings.

oh, and you definatley should watch what mrl mentioned, these are excellent animes.

FLCL - If you want a daily dose of CRACK.

El Hazard's good, some of the Gundam Series are good, other suck ass. Noir is possibly the best anime out there, and Vandread isn't bad either.
