Re: edinburgh
Pubs - Dirty Dicks is pretty cool and does really good food!
website is www.belowthebeltfoodco.com
dunno if the address etc is on there... but it's good.
Oh and the Jekyll & Hyde is from the eerie pub company - the one in Nottingham is brilliant (Pit & Pendulum) so I'm sure that would be a good choice.
There are plenty of pubs down the royal mile though.
oh and - http://www.edinburgh.pubs.freeuk.com/rm.html

Re: edinburgh
Despite living in the country my entire life, i've been to edinburgh only once, for a day with my dad when i was 9 or something.

Go in to the old town, then pub-crawl -you will find Edinburgh is more than suited to a good ol' fashion British piss-up.

There used to be a tolerance zone in leith but the council got rid of it because they want to redevelop the area and make it trendy.
If you're looking for lush fudge, go visit the fudge kitchen on the royal mile. It'll cost you a lot but ohmmmmmmmmmm it's LUSH!

Re: edinburgh
they do decent whiskey's down the royal mile too.
I bought a bottle for my dad but while i was in the shop some japanese tourists were buying a £300 bottle...
The one I bought was very nice apparently and only cost £15.

I doubt you'll like the same kind of places I do, but Bannermans is pretty good. You'll probably be better off with the places JBOY mentioned although I wouldnt go near them personally.

Are they rough, or are they just dirty, or is it just a question of personal preference?

Grassmarket pub crawl is a stag night tradition, usually meaning that most pubs are full of pub crawls that ahve a tendency to join up, there was talk at one time of hving a world record of most people on a pub crawl but the council KO'd the idea.
