Juuni Kooki, Naruto, Trigun, Hellsing, Berserk, Cowboy Bebop, GTO, Last Exile. All series
Other noteworthy are Read or Die (small 3 ep thing, not the big one, not seen that one), Petshop of horros, and uhh, hmm, ned something more, hmm, Dragon Ball Z \o/
Movie-wise, get Grave of the Fireflies, Princess Mononoke, Galaxy empress. Or something.

Mark, havent you watched Berserk or did you dislike it?
Considering it's probably the est ending EVAR, and that the soundtrack+animation rocks, and that the story is , why have you not mentioned it?

Outlaw Star > Cowboy Beebop, IMO. Simple plot with some nice action sequences, it comes off as cheesey but humourus, until the latter, which is bad cheesey.
Depends what level of maturity/persuasion you're looking for, most of the fan subs I've been watching lately probably wouldn't suit.

Make sure you get and watch series 1-3 of kenshin, and in order.
Since no-one has mentioned it yet, Furi Kuri (aka Foolly Coolly, aka FLCL) seems intriguing (haven't watched it all yet).
Metropolis is probably the best stand alone anime film i've seen.
The finest giant robot anime i've seen is Vision of Escaflowne.

FLCL - If you want a daily dose of CRACK.
El Hazard's good, some of the Gundam Series are good, other suck ass. Noir is possibly the best anime out there, and Vandread isn't bad either.
