it's not really all that complicated, any ship emped, killed, stolen and survived is "logged" for both defending and attacking fleets.
So if you look at the attacking table and see there's about 4,2mill emped harpies, it means that about 4,2mill harpies has been emped when attacking a planet.
Same goes for the defending side, where almost 29mill harpies has been emped.
